Pedro Gabarra, Joao Newton’s son, is the 5th generation of coffee growers in his family. Coffee is more than a business, coffee is a passion for the family. The care for the environment is a paramount at the farm and it is recognized by the certifications they carry. In 2019 they were awarded the most sustainable farm in Brazil.
“The black market trade for exotic animals in Brazil is only behind drugs and weapons in terms of money involved, and 82 per cent of seized fauna are birds,” Marcelo says. “Brazil has the second highest bird diversity in the world, but with 175 threatened species, it comes first in that category. When captive birds are seized by the government, Wings takes care of them until they’re ready to be released back to nature.”
We were fortunate enough to have the time to have a good old chat with Pedro, he’s a friend of our roastery and we’ve been supporting his great work since we launched our roasting operations. This coffee has been a stalwart within our roastery. Very consistent, high quality and pleasant coffee. The shortbread note within this coffee is very pronounced and equates to a tasty, easy drinking espresso.

A great roast as an espresso or with milk
Every time I try a different coffee here it becomes my new favourite, so I'll try not to use those words here as my next adventure will be one of the new five just announced. Unbelievable body and mouthfeel I've not experienced before, which to me is much more suited to espresso than with milk (which I didn't enjoy anywhere near as much) A great start of the day morning coffee.....and lunchtime coffee.... and afternoon coffee....
My family and I love this coffee! Excellent, balanced flavour. We have it as espresso, pour over, and with milk. It holds its ground against the competition. Now our go to daily.
I realy like this coffee with so many different notes. It's so rich, creamy and it brings so many flavours harmonizing with each other very well.
What I found out that every time I have it I will taste something new .
This coffee is good on it's own and with milk as well.
My son likes it with ice cream on the top.

Absolutely beautiful coffee to start the day with - I'm even pausing to take in the aroma of the beans every time before grinding. Will definitely get again.
