Tasting Notes –

Before brewing this coffee take a moment to smell the beans out of the grinder, the exotic aromas are jaw dropping. In the cup, you’ll get an upfront Nougat sweetness with the exotic notes finishing the palate. Kiwi, Melon and Grapefruit is what we cupped on our table but there is so much more complexity to this coffee. It is certainly our best coffee in stock at the moment.

Preparation – Brilliant filter coffee.

Grown by our friends at the Arcila family, Jairo Arcila Finca Santa Monica.

This coffee was carefully hand picked in order to use only the ripest cherries. It was exposed to a dry anaerobic fermentation of 18 hours before being pulped; sundried on raised beds to the ideal moisture content, with the mucilage still on. This microlot was processed by Felipe Arcila at the La Pradera Washing Station.

The microlot is 100% Castillo. This variety was developed by the National Federation of Coffee Growers (“Federacion Nacional de Cafeteros”, in Spanish). It is more productive then the alternative Caturra varietal and more resistant to the coffee leaf rust.
